Human spam filtering is exactly what it sounds like. A person manually evaluates each message to determine if it's spam or not on your behalf. This method is highly effective and has a lower risk of false positives than using a computerized email filter. It's also extremely expensive. It's kind of like having a secretary that you've outsourced to India read all your email for you.

A white list is the opposite of a black list. A white list contains only senders who you know to not be sending spam. In some implementations all email from anyone not on the list is blocked. More frequently, people not on the list are referred to a challenge / response system.

Client-side spam filtering is using an application that resides on your PC to filter spam. These email spam blockers use many different distinguish spam from legitimate emails. SpamButcher is an example of this type of program.

Server-side spam filtering is any software that resides on your email server to get rid of spam. Again, the filter could use various different technologies to perform this task. Exchange server's anti-spam functionality would be an example of this.

Opt-out lists contain email addresses which spammers aren't supposed to send email to. They are rarely observed, and many of the commercially run ones are scams.
